Vegetable Casserole Recipes



In this section you can find some easy ideas for break fast. In my opinion, casserole dish could be the simplest dish than any others. Furthermore, adding vegetable will make the casserole more valuable to be served.

You do not have to care too much about the cooking step. Just cut the ingredients up, put all together in your casserole pot and bake it. That's all! Sound interesting? Then, try the following casserole recipe.

Mixed-Veggie Casserole

2 packages (10 oz each) frozen cut green beans, thawed
1 box (10 oz) frozen corn kernels, thawed
2 red peppers, sliced
1 can (10 3/4 oz) fat free cream of mushroom soup
1 cup fat free sour cream
2 tablespoons all-purpose flour
1 cup fat free cheddar cheese, shredded
2 teaspoons each fresh tarragon and parsley, chopped

Heat oven to 350 degrees F.

In a 3 qt. casserole, toss together green beans, corn kernels, red peppers, soup, sour cream and flour until all ingredients are well-tossed and well-coated.

Bake 20 minutes. Sprinkle with cheese and herbs, and bake 15 minutes more or until golden.

Beside veggies, you can also have another ingredients such as chicken, pork, seafood and so into your casserole.

You can also have special topping on your dish. The following Sweet Potato Casserole is for your choice. Brush the topping with egg yolk when it's half done for a better appearance, but that's optional.

Sweet Potato Casserole

For Topping:
1/2 cup firmly packed brown sugar
1/3 cup all-purpose flour
4 tbsp butter
1/2 cup chopped pecans
Combine ingredients and set aside

For Casserole:
6 sweet potatoes, cooked and mashed
4 tbsp butter, softened
3/4 cup sugar
2 eggs, beaten
1/2 cup milk
1/4 tsp vanilla

Preheat oven to 350 degrees F.

After mashing sweet potatoes, add butter, sugar, eggs, milk and vanilla.

Beat until light and fluffy. Transfer to a well buttered casserole dish. Sprinkle topping evenly over sweet potato mixture.

Bake for 25 to 30 minutes.

Spinach Casserole

2-10 oz packages of frozen chopped spinach, thawed, drained and squeezed dry
8 ounces crumbled feta cheese
2 cups shredded mozzarella cheese
1 cup melted butter, divided
1 cup cubed processed cheese food
2 tbsp white vinegar
1/2 tsp garlic powder
salt and pepper to taste
1-16 ounce package phyllo dough

Preheat oven to 425 degrees F

Combine spinach, feta cheese, mozzarella cheese, processed cheese, 1/2 cup of the butter, vinegar, garlic powder, salt and pepper. Mix well and set aside.

Place a layer of phyllo dough into the bottom of a lightly greased 2-quart casserole dish.

Spread the spinach and cheese mixture into the dish and top with 4 layers of phyllo dough, spraying each layer with butter-flavored cooking spray. Drizzle the remaining 1/2 cup butter over the top.

Bake at 425 degrees for 20 minutes
