Ideas for Easy
Breakfast Recipes in Busy Morning

Ever wonder what can be quick yet
healthy meal in busy morning?



The following breakfast recipe would hopefully help you whenever you are in very tight morning time but you need to prepare an easy healthy breakfast for your family.

There are some things that quite important to understand on preparing breakfast meals:
  • Avoid to serve deep fried dish. Some studies show that additive conained in frying oilcould disturb our ability to be focus on what we are working on

  • Try to serve "light meals" for breakfast, that is meals contain easy to disgest and absorb ingredients(To serve fruit and vegetable is fine idea). As our digestion system are in "wake up"session after long night break, hard food could upset them

  • Avoid too many seasonings, salt or any of additive on your meals

  • Keep some spaces in your stomach free from any food, getting youself too full in the morning could deactivate your body, early sleepy and uncomfort stomach feelings

If you need some ideas, check out the followings. The Farmers Breakfast is the first variation.

I don't have any idea why it is named that way, maybe in Germany, where this recipe comes from, farmers usually eat this for breakfast. Anyway, who cares?it's quick, easy to prepare and yummy, too.

Farmers Breakfast

4 ea Potatoes; Medium
4 ea Bacon; Strips, Cubed
3 ea Eggs; Large
3 tb Milk
1/2 ts Salt
1 c Ham; Cooked, Small Cubes
2 ea Tomatoes; Medium, Peeled
1 tb Chives; Chopped

Boil unpeeled potatoes 30 minutes. Rinse under cold water, peel and setaside to cool. Slice potatoes.

In a large frypan cook bacon until transperent. Add the potato slices; cook until lightly borwned. Meanwhile blend eggs with milk and salt. Stir in the cubed ham.

Cut the tomatoes into thin wedges; add to the egg mixture.

Pour the egg mixture over the potatoes in the frypan. Cook until the eggs are set. Sprinklewith chopped chives and serve at once.

For 4 servings

You can add some green veggies, too. The next recipe called Baked Spinach with Cheese is what mommy must serve for breakfast to ensure their children get all benefits of green vegetable in great taste.

Baked Spinach with Cheese

1 lb fresh Spinach; wash and dry
1/4 lb Butter
1 ea Onion; Large, Diced
2 ea Garlic; Cloves, Minced
1/2 lb Emmenthaler Cheese; Grated
1 ts Paprika
1/8 ts Nutmeg
1/4 ts Pepper

Cut spinach into strips. In a large Dutch oven, heat butter until bubbly. Add onion and garlic, saute for 2 to 3 minutes. Add spinach. Sprinkle with salt.

Cover and steam for 5 minutes. Remove from heat.

Grease an ovenproof casserole. Sprinkle half the cheese over the bottom of thecasserole. Add the spinach. Sprinkle with paprika, nutmeg, and pepper. Top with remaining cheese.

Bake at 360 degrees F about 20 minutes or until cheese bubbles.

Pour potatoes and cooking liquid into a sieve or food mill set over a large bowl. Force potatoes through.

For 4 servings
