Cucumber Salad Recipe



We usually serve this veggie as pickle. However, in this section, we will try to give some fresh sensation as well as new appearance to this veggie :).

Cucumber Salad

Ingredients:

  • 2 Medium Cucumber
  • 1 Cup Blue Cheese (crumbled)
  • 1/2 tsp Salt
  • 1/3 Cup Green Onion
  • 2 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 1/4 tsp Fresh Ground Pepper

Directions:

  • Cut each cucumber in half the long way. Discard the seeds.
  • Cut up into 1/2-inch cubes and put them in a bowl.
  • Sprinkle with salt. Add onions and stir.
  • In another bowl, mix together cheese, lemon juice, oil, and pepper. Add that to the first mixture.
  • Stir the salad and serve.

If you want to mix cucumber with another ingredient, try the next variation. You can also use sweet corn instead of baby corn.

Cucumber and Baby Corn Salad

Ingredients:

For salad:

  • 1 medium cucumber, cut halve circle
  • 1 lettuce, shredded
  • 1 onion, cut halve circle
  • 10 baby corn, steam, thin sliced

For dressing:

  • 1/2 bottle Thousand Island dressing
  • 1 lemon, juiced
  • 1/2 tsp sugar
  • 1 tsp chili sauce

Directions:

  • Place all ingredients on a large bowl
  • Mix all dressing ingredients well, pour on the salad as about to be served.

By the way...
I just want to remind you that just because you have salad does not mean that you have all fat-free foods. Caution that some dressings may contain high fat!
