Variation for Carrot Salad Recipe




Carrot has been known well for its carotene content and this carrot salad recipe will help you to serve the nutrient in an interesting way for your children.

Remember that serving vegetable in the way they like is a good start for introducing your young child to vegetable.

The first variation is Carrot Salad with Cinnamon. There are some unusual ingredients to be mix as salad in this recipe, such as mint and cinnamon, which makes this recipe special.

Carrot Salad with Cinnamon

1 pound carrots, shredded (approx. 3 cups shredded)
3/4 cup pineapple, chopped or crushed
1/2 cup raisins
6 ounces plain low-fat yogurt
2 tablespoons fresh mint, chopped
2 tablespoons lemon juice
1 teaspoon honey
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin

Combine all ingredients in a large bowl and mix well. Cover and refrigerate for at least 2 hours.

For 6 serves



If you want to have a carrot salad recipe with higher protein, try to add more eggs in your salad dressing. In this Carrot-Egg Salad, yolk, mustard and some seasoning will let you taste a bit different dressing.

Carrot-Egg Salad

For salad:
2 medium carrot, diced, steamed
5 eggs, take the white parts, diced150 gr sweet corn, drained50 gr green beans, boiled a while100 gr pineapple, diced

For dressing:
5 yolk, milled1/2 tsp mustard1/2 onion, chopped1/2 tsp tabascosalt, sugar and pepper, if necessary

Combine all dressing ingredients, mix well, set aside

On a large bowl, arrange all salad ingredients. Pour with dressing and serve immediately.
