Tomatoes Variation In Easy Canned Vegetable Recipe

Canned Stewed Tomatoes with Chopped Celery
30 tomatoes, scalded and cut up
3 green peppers, chopped
3 onions, chopped
3 stalks celery, chopped
2 tbsp. celery salt
4 tbsp. sugar
1 tsp. salt
Mix all ingredients together and pack in sterilized jars. Wipe jar tops, remove air bubble and seal.
Start process by stewing it in boiling water bath for 45 minutes.
Note: You can always adjust amount of green peppers, onions and celery to you tastes.

Use green tomatoes instead of the red ones. Consider to maintain the shape of tomatoes to be canned since you will have to take it out of the jars and fry it. If you use ripe red tomatoes for this canned vegetable recipe, you will not get a best shape of it.

Fried Canned Green Tomatoes
Green tomatoes (use as many as you like)
Boiling water
Salt
Wash all tomatoes. Slice and place in sterile wide mouth jars. Cover with boiling water. Add salt (1/2 tsp. for pint jars, 1 tsp. for quart jars). Water bath for 30 minutes until sealed.
Direction to cook: Open jar and discard liquid. Batter green tomatoes in cornmeal or flour (your choice), then place in hot oil and fry until golden brown.
